Thoughts: VEGAN NUTRITION
Earth lover Carolyn Wagner on how to get nutrition on the Earth Diet and being vegan..."Now that we have completed a vegan week and looked at some of the areas and concerns that vegans have I can hear your concerns. What about iron, protein, calcium? Plants are very rich in all these nutrients. Elephant and Giraffes two of the strongest tallest animals derive all their calcium and iron solely from plant based food what makes you think that we can’t. Iron is found in green veggies, nuts, seeds, legumes and wholegrains. Calcium can be found in brazil nuts, broccoli, carrots, parsley and rhubarb. Protein is in everything. The only products that do not contain protein are sugary soft drinks and oils. Also too much animal protein in a diet causes calcium to leech from the bones and this is the leading cause of oesteoperosis and not the fact that people aren’t getting enough calcium. “But I love chocolate or ice cream too much.” There are alternatives. Over the years many companies have developed products that are alternatives to all your old favourites nuggets, sausages, burger patties, ice cream, lollies. Of course these should only be consumed occasionally and you should be living more on fruit, veggies, grains and legumes to maintain a healthy vegan diet. There are many books and resources to help you along the way. It’s not as hard as you may think. Why not try it for a week or even designate one day as a meat free day. Meat free Monday works well. Easy to remember. It will help reduce your impact on the environment and improve your health."
Challenges: I eat more on the Earth Diet than I used to, and I feel like I am consuming consuming, consuming, and spending so much time on eating, so I keep reminding myself that I am eating pure and clean foods and my body has been starving of nutrition for years and must be loving all this love and nuture! Hehe!
Triumphs: People comment on the Earth Diet as "How do you get your vitamins and proteins and calcium?". What I Ate Today:
Breakfast: 3 nectarines. A beetroot, carrot, celery, ginger juice.
Lunch: Eggplant, zuchninni, tomatoe, fresh basil, garlic, brocoli cooked in olive oil. MMM MMM!
Dinner: Organic green grapes and cherries and two green apples.
Dessert: No dessert.
Snacks: No snacks.
Exercise: Spin class at the gym.
