Here is one the recipes I am using... ENJOY!
(Feel free to chew on the herbs after they are boiled for extra nutrients)
To ICE SKATE in CENTRAL PARK in NYC!
As I was skating around I really got how grateful I am to be alive, and have arms and legs,
and a healthy functioning body to be able fulfill this!
I am learning that
the more I APPRECIATE,
the more I enjoy life.

If you are skeptical try it for yourself! DELICIOUS natural MAC N CHEESE!
1 cup extra virgin coconut oil plus extra for cooking
1 cup of coconut milk
one brown onion diced
1/4 cup nutritional yeast
3 cloves of garlic diced
1 tablespoon himalayan salt
1/2 cup fresh thyme
1 tablespoon of sesame oil
1 cup of chopped cauliflower
1 packet of brown rice pasta - macaroni!
5 cups of vegetable stock
(or make your own vegetable stock: boil for 1.5-2 hours in a large pot... 5 cups of water with 2 carrots diced, 2 tomatoes chopped, 3 celery stalks chopped, 1 small onion diced, 2 cloves of garlic diced, one leek chopped, 3 tablespoons of himalayan salt, a handful of bay leaves, 2 tablespoons of thyme and 2 tablespoons of parsley... After boiling drain so you are left with the liquid. Use this as vegetable stock and you can store in glass jar in fridge for one week. Discard the fiber of the vegetables, use it for compost or eat it, do what you like to be resourceful.)
1. In a large pot add the vegetable stock and coconut oil and bring to the boil.
Stir and then add the pasta.
2. While the pasta is boiling, in a fry pan heat extra virgin coconut oil. Add the onion and garlic and fry until golden. Then Add the salt and thyme and fry together for a couple minutes and then add all of this fry into the pasta pot.
3. Next add the chopped cauliflower, coconut milk and thyme and
let simmer on medium heat for 4 minutes.
4. Add the nutritional yeast and stir.
5. Add the sesame oil as the sauce starts to thicken.
6. It is ready when the pasta is cooked and the sauce is thicker.
+ To make the sauce thicker add more nutritional yeast, cauliflower and/or pasta.
Try adding one chopped zucchini!
+ If it becomes too dry add more sesame or coconut oil.
+ If you want it cheesier add more nutritional yeast!
+ Add more salt if you like it saltier!
+ Add peas for some color.
+ Add turmeric to make it more yellow!
+ Add curry powder for MAC N CHEESE CURRY STYLE ;)
This recipe is DAIRY FREE, SOY FREE and GLUTEN FREE. It is a great alternative to 'cheese'!

Talking to all chocolate lovers here...
OR people who have been turned off chocolate because of tasting the processed version... trust me that is a completely different species of CHOCOLATE! Now its PROCESSED store bought CHOCOLATE vs RAW CHOCOLATE. Store bought chocolate (store bought chocolate is decreasing and other options like Rock N Raw Chocolates are being offered as a tastier and healthier option. Why.... because it makes sense. so many people are feeling better eating better foods and it just so happens to be that majority of human beings on earth eat chocolate on a very regular basis. I know when I ONLY switched to eating REAL CHOCOLATE in my life, IT CHANGED MY LIFE, just that one switch. It is the refined sugar, and affected dairy, genetically modified soy, and other chemical ingredients that leaves us feeling less good after eating store bought chemical laden chocolate. Some people just don't like to buy store bought processed chocolate anymore after finding out about the child who labored the cacao bean...Rock N Raw is one of the new RAW VERSIONS and is dairy free, soy free, gluten free, but ok who cares about that really when it tastes good... so this tastes good PLUS also uses clean ingredients that our body CAN DIGEST WELL. we CAN have our chocolate and EAT IT TOO! :)

My new winter favorite :)
Total making time average: 30 minutes
2 large sweet potatoes cut into fries
coconut oil for cooking
one bunch of fresh basil
one cup of dried shredded coconut
OR shred your own coconut from a fresh one!
+ ADD 1 tablespoon of himalayan salt at
the end for sweet and salty!
+ ADD 2 tablespoons of curry powder at the end for curried fries!
1. Heat 1/4 cup coconut oil in a fry pan.
2. Add fries, each one should be covered well in oil
3. Let the fries cook and when they are golden brown gradually add coconut and basil !
